I make a Bingka



Hmm i tried to bake a bingka that's one food that I miss in the Philippines and really it is a great food to eat. I bake three times and hubby likes it and my son too. Until now we have still that bingka and i will bake again maybe next time. Here's how:

Ingredients (Note : Santan & Sugar have been reduced from original recipe)

500 ml santan
1.5 kg of grated tapioca
150 g grated coconut (optional if you want a bit of rough texture)
350 g sugar
3 tsp tapioca flour
3 eggs
1 tbsp soft butter
1 1/2 tsp vanilla essence
1 1/2 tsp salt
A bit of yellow coloring

Preparation

Mix all together , smoothly
Put in a baking tin and bake at 180 deg to 200 deg - depend on your oven
It takes a while to bake until inside all cook
Test with satay stick
Do not cut immediately as it will still be soft

I wonder if bingka just the same as bibingka? Anyway, the photo looks so good!

kalami sa bingka oy..bingka or bibingka is the same i think..
